Animal and vegetable fats and oils - Determination of acid value and acidity
This document specifies three methods (two titrimetric and one potentiometric) for the determination of acidity in animal and vegetable fats and oils, hereinafter referred to as "fats". The acidity is expressed preferably as acid value or, alternatively, as acidity calculated conventionally. This document is applicable to refined and crude vegetable or animal fats and oils, soap stock fatty acids or technical fatty acids. It does not apply to waxes. Since the methods are completely non-specific, they do not apply to differentiating between mineral acids, free fatty acids and other organic acids. The acid value, therefore, includes any mineral acids that are present. Milk and milk products (or fat coming from milk and milk products) are excluded from the Scope of this document.

L'indice d'acide et l'acidité rendent compte de l'altération hydrolytique des corps gras. Ces caractéristiques sont utiles pour apprécier la qualité des corps gras bruts (ou vierges) et permettent de suivre le raffinage et d'en contrôler l'efficacité (mesure de l'acidité résiduelle). Des valeurs d'indice d'acide peuvent être données pour des produits issus de la lipochimie. À cette fin, le présent document spécifie deux méthodes titrimétriques et une méthode potentiométrique. Ces méthodes ne sont en aucun cas spécifiques, elles ne peuvent donc pas être utilisées pour différencier les acides minéraux, les acides gras libres et autres acides organiques. De ce fait, l'indice d'acide inclut tout acide minéral potentiellement présent. Le présent document définit les termes et définitions, le principe, les réactifs, l'appareillage, l'échantillonnage, la préparation de l'échantillon pour essai, le mode opératoire, le calcul, la fidélité et le rapport d'essai. L'Annexe A présente les résultats des essais inter-laboratoires.
