L'indice de réfraction est une caractéristique de pureté en relation avec la structure chimique. Il augmente avec la longueur de la chaîne, l'insaturation, la conjugaison des doubles liaisons. Dans l'industrie des corps gras et oléagineux, il est utilisé pour suivre l'hydrogénation, pour des contrôles rapides de mélanges (exemple : tournesols linoléique et oléique).Au laboratoire, il est à la base d'un mode de détection en chromatographie liquide.Pratiquement, c'est une détermination simple, rapide et ne nécessitant que peu de matière.Le présent document décrit une méthode pour la détermination de l'indice de réfraction dans les corps gras d'origines animale et végétale.
