ISO 8534:2017 specifies a method for the determination of the water content of animal and vegetable fats and oils (hereinafter referred to as fats) using Karl Fischer apparatus and a reagent which is free of pyridine. Milk and milk products (or fat coming from milk and milk products) are excluded from the scope of this document.

La détermination de la teneur en eau des corps gras s'effectue selon la méthode de Karl Fischer et d'un réactif sans pyridine selon deux modes opératoires différents. La présente Norme internationale spécifie la méthode volumétrique permettant de déterminer des teneurs en eau relativement élevées, en milligrammes (fort taux d'humidité). Cette méthode est utilisée pour les échantillons ayant une teneur en eau comprise entre 1 mg et 100 mg. L'Annexe B spécifie un titrage coulométrique nécessitant une teneur en eau de l'échantillon comprise entre 10 microgrammes et 10 mg. La méthode coulométrique est plus sensible que la méthode volumétrique et permet la détermination de teneurs en eau plus faibles.
