L'huile contenue dans les graines oléagineuses contient naturellement des acides gras libres, en quantité d'autant plus grande que la graine a été altérée par les conditions agro-climatiques de récolte ou les conditions de séchage et de stockage. La teneur en acides gras libres qui s'exprime par l'indice d'acide ou l'acidité, est donc une mesure de l'état d'altération de la graine. À cette fin, la présente norme spécifie une méthode titrimétrique.
