Microbiology of the food chain - Estimation of measurement uncertainty for quantitative determinations
This document specifies requirements and gives guidance for the estimation and expression of measurement uncertainty (MU) associated with quantitative results in microbiology of the food chain.It is applicable to the quantitative analysis of:? products intended for human consumption or the feeding of animals;? environmental samples in the area of food production and food handling;? samples at the stage of primary production.The quantitative analysis is typically carried out by enumeration of microorganisms using a colony-count technique. This document is also generally applicable to other quantitative analyses, including:? most probable number (MPN) techniques;? instrumental methods, such as impediometry, adenosine triphosphate (ATP) and flow cytometry;? molecular methods, such as methods based on quantitative polymerase chain reaction (qPCR).The uncertainty estimated by this document does not include systematic effects (bias).

ISO/TS 19036:2006 gives guidance for the estimation and expression of measurement uncertainty (MU) associated with quantitative results in food microbiology. It is applicable to the quantitative analysis of products intended for human consumption and the feeding of animals, and of environmental samples in the area of food production and food handling, typically carried out by enumeration of microorganisms using a colony-count technique, but applicable also to quantitative analysis by alternative instrumental methods. ISO/TS 19036:2006 is not applicable to enumeration using a most probable number technique, or the analysis of low levels of microorganisms.
Le présent document décrit les lignes directrices pour l'estimation et l'expression de l'incertitude de mesure (IM), liée aux résultats des analyses quantitatives en microbiologie des aliments. Il s'applique : aux produits destinés à la consommation humaine et à l'alimentation des animaux ; aux échantillons environnementaux dans le domaine de la production et de la manutention de produits alimentaires. Le présent document ne s'applique pas : au dénombrement utilisant une technique de Nombre le Plus Probable ; à l'analyse de faibles niveaux de micro-organismes. Dans le présent document, l'incertitude de mesure associée aux "faibles" nombres de micro-organismes, tel que décrit par l'ISO 7218, n'est pas estimée car il n'a pas été convenu de méthode simple à appliquer dans ce cas.
