Les liaisons éthyléniques des acides gras insaturés, présents dans un corps gras, donnent avec l'iode (et plus facilement avec le chlorure d'iode) des dérivés d'addition iodés (ou chloroiodés). La quantité d'iode fixée par les chaînes grasses est donc une méthode d'évaluation de l'insaturation globale d'un corps gras.
